In cornering you are limited by grip and four wheel steering isn't going to change that. Same reason it's not used in racing. Ads complexity and weight, but no real benefits.
I do see your point about it feeling nice and stable. It's probably great if you are pulling a trailer. Same for lane changes. But for pure handling when having fun in the car, I still can't see how it would be any good.
