Paint doesn't take long to dry. Done and rolling in the same afternoon.
I actually found a guy that did the paint/prep work for me. I've done this before on other cars i've owned and its a major pain in the ass to do.
He's out in the Lakewood/Log beach area. If interest PM and i can get you his info.
