A/C turns on ....

Automatically on engine start up. Is there any way you can disable that. 2015 BMW 550..

My AC default the last setting.

If you switch the A/C button OFF before turning the car OFF, it shouldn't come ON while restarting the car.
The blower will probably start but the compressor will be OFF.

Dealer can adjust that setting for you or if you are planning to have your car coded, they can change for you as well.
