20" wheel offsets for 535i?

You can always shop around for others willing to do the work. I assume one of those other shops may be able to do the work if you sign some sort of waiver.

Can you confirm that 4x (front and rear) 19x8.5 et20 will fit my f11 m pack with 245/40/19 tires?

I've effectively got ET21 in the front with 245/40/19 on my winters, and that's flush. If your not lowered, it will stick out slightly.
