Excuse my ignorance, but what does "clay" mean?

Basically it's rubbing your paint with some clay. As the clay is slightly abrasive but also soft and tacky it removes surface contaminates from the paint and also "holds" them rather than just spreading them around.

I think it would all depend on the car colour and if you want to add any gloss / depth to the paint.

I would go
Wash
clay
Wash
Glaze / polish depending on preference
Finish with nano hard wax.

I think the clay is worth doing. I do my car 2 or 3 times a year.
Its surprising how rough the paint can feel. Seen the classic test is to put plastic bag on your hand and run it over the paint. It will amplify any roughness present. Once the car has been clayed, it should feel as smooth as glass. You'll fee the paint getting smoother as you progress. You wouldn't think it would make much difference but it does.
It basically grabs any small deposits that are stuck on the clearcoat and pulls them out.

Just make sure you sue enough lubricant as the last thing you want to do is end up scratching the paint.
