Also I was thinking to go 275/35/19 in the back and 245/40/19 in the front.

I think the Michelin is a better quality tire, not too sure if I can trust the Indy 500 when doing a top speed over150mph
If you are going with a summer tire, why compromise with an all-season Michelin? Go for a Pilot Sport 4S or similar. Regarding your staggered setup idea, I have the older Michelin Pilot Super Sports in the staggered sizes you propose, and I've been running them for four summers so far without any issues at all.
