I just did some searching on RealOEM and noticed that the E60 M5 rear calipers don't have an integrated parking brake, like the stock F10s do. I believe this issue is what prevents us from using F01 rear calipers, so I assume E60 M5s won't work either unless you can find a different solution for the parking brake.
