Lowest possible offset depends on the tires, I now got Michelin PS4S 295/30, and under full suspension compression, they're just gracing the inner lining of the fenders, but not the fenders itself. This is not a problem with daily driving.

Fronts depends how low your car is
After our discussion, I decided to use your setup as a foundation since I know that's the holy area. What if I went 285/30/20 on a 20x11 et 36? 285-295 is ideal tire size for an 11. right? From my calculations that is a 5mm poke difference from your 295/30/20 20x11 et 46 setup. thoughts?
Sure 285/30/20 will work on 11'' wide wheels, just with a little more stretch than I've got. Hard to say if ET36 will work, I'd expect some rubbing with enough suspension compression. Don't think I'd go lower than ET40.
