Smothering them with sawmill or sausage gravy (thickened/creamy) is a breakfast staple in the southeast USA, where some would argue that it contributes to the region's higher rate of cardiac problems. Biscuits here are also paired with fried chicken for lunch/dinner, and used to make sausage patty or bacon/egg breakfast sandwiches. I do have biscuits and gravy on occasion when visiting the south, and they are very good in taste...but not very good for my barely-functioning ticker.....

I personally do not like grits (like a porridge), and okra has been hit-or-miss for me whenever I order it. Speaking of collard greens and the south, the southern chef who runs a Main Street soul food takeout shop in a nearby town is back from his business trip today. We'll be having calabash chicken and collard greens for dinner tonight! Calabash is a real niche regional dish from the coastal Carolinas, and he makes it special for us ever since my DW asked if he knew what it was.....

Twenty years ago, I did a year as the food critic in a monthly national motorsports magazine. It started out as a one month joke article, and quickly morphed into the most-read column in the magazine every month. Every column was about the regional foods that were offered at various event stops of the national tours, and it brought a virtual taste of being on the tour to drivers who stayed home. The whole tradition behind King Cake in New Orleans Mardi Gras is one example of a column that I did. I learned most of it at the same time!
Ever since then, I always pick to dine at places that we DON'T have at home when traveling. I want to experience the local/regional cuisine, and stopping at a roadside dive buffet is always more interesting than another burger from McDonalds.....
