Was going to make lazy man's Shepards pie (layer of potatoes, sautéed onions, Hamburg, layer of corn).. but the potatoes were a bit "old", so rice to the rescue... somewhere under there is rice..

Then I boil my potatoes, celery and onions. Drain. Amount is up to you. Add everything in a pot. At least Ľ pound of butter and about half a liter of 18% cream. Keep the mixture thick then add some or all of the saved water until you get a nice texture. Add grounded peppercorn to taste. No need for salt as the water has extracted it during the parboiling. Salad with grilled Chaldean flatbread. Salad included tomato, onion, Kalamata olives, pepperoncini and lots of parmesan! EVOO, freshly squeezed lemon juice and S&P.
Fresh cherries for dessert, then homemade strawberry ice cream for an evening treat! |

Did carnitas burritos tonight, with fresh guacamole and a homemade tomatillo salsa. Unfortunately I didn’t take pictures of the carnitas or the burritos!
I did snap a pic of the veggies for the salsa while they were on the grill, and then a pic of the salsa and guac before it got put away after the meal. Next time, salsa needs more heat. |
